Lemon Sugar Scrub



Lemon Sugar Scrub

2.5 cups sugar
2 Tbsp freshly squeezed lemon juice
Zest from Lemon
1 cup extra virgin olive oil
20 drops Lemon Essential Oil

Mix together the sugar, and olive oil. Add in lemon juice, lemon zest and lemon oil until it’s a gritty paste. Store in a glass jar with a lid. This scrub lasts for months and is wonderful for dry hands and skin!
**To keep it fresh longer, avoid sticking your hand directly into the container. A wooden (or regular) spoon works well for scooping out the scrub before use.

Chicken Pillows

Ahh, Chicken Pillows! One of my family's most favorite meals. Perfect use for leftover chicken, too!


Chicken Pillows
Ingredients
  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ½ Tablespoons dried chives
  • 1 ½ Tablespoons fresh onion minced
  • 3 chicken breasts, cooked and diced (around 3 cups)
  • 2 (8 ounce) cans Pillsbury crescent rolls
  • 1/4 cup melted butter
  • Italian bread crumbs (around 2 cups)
  • Gravy:
  • 1 (14.5 ounce) can cream of chicken soup
  • 1 (0.87) package chicken gravy mix
  • water
Instructions
  1. Preheat oven to 350 degrees.
  2. Using a hand mixer or by hand, beat cream cheese and sour cream until well combined. You can do this by hand if your cream cheese is soft enough. Stir in salt, pepper, onion, chives, and diced chicken.
  3. Using Pillsbury crescent rolls, take 2 triangular rolls and push together at perforated seam to make into a square. Make sure you seal the perforations well so your filling doesn't come out. Put about 3 tablespoons of chicken mixture in the center of each square. Fold the dough corners to the center over the chicken mixture forming a pillow.
  4. Dip each pillow in melted butter on both sides. Roll in bread crumbs on both sides. Shake excess crumbs off. Place chicken pillow on cookie sheet and bake at 350 degrees for 20-25 minutes.
  5. Make gravy by mixing one package of chicken gravy mix, one can of cream of chicken soup and 3/4 can of water in a small pot. Mix together and heat until warm. Serve chicken pillows with gravy poured over top.

Lists With Friends 2014!

Welcome to my first list (and post) in a very, very, very long time. I had to get a lovely rescue email just to get in here, y'all. :) 

Moving on: 

Currently ...

1. Thinking--about my 2014 OLW "LESS" (more on that next list!)
2. Enjoying--the weather. Sorry, E! We're just not that into snow, as is the rest of the South.
3. Feeling--overwhelmed most days so I just smile, just like Buddy. :D
4. Wearing--ratty sweatpants and a super soft favorite tee. Keeping it real here, y'all!
5. Needing--to make a "quick" trip to Target. Hahahaha. 
6. Wanting--to simplify. 
7. Listening--to the VERY LOUD humming coming from the dishwasher. Earplugs, anyone? 
8. Making--a list for the next LWF. 
9. Eating--leftover chicken pillows. Recipe from Becky Higgins. Holy Yum. 
10. Drinking--Dr Pepper. Should really be water, but, alas.

Bluebonnets 2009







The girlies and I went for a quick trip to Chappell Hill over Easter weekend. I decided we'd better go quick before the weeds take over. Found a wonderful spot just down the road from the town and snapped a few. These are the best ones believe it or not. Claire is NOT a sit still and smile for the camera kinda kiddo. *sigh*

Snow day!

If you squint your eyes really hard, you can see the few flakes. Hee hee.
Actually, a few minutes prior to this shot it really was more visible. I promise.
Claire had the best tme trying to catch the few flakes in her mouth.
While I had fun watching her play I was worried that poor Emma would completely miss out on the fun but as luck would have it, the kids PE teacher let them out of the gym this afternoon to see the snow falling. And that was the first thing she said when she flew out of the bus so she did n't miss out on the fun afterall. By the time the bus arrived it was turning into sleet, which isn't quite as much fun. *wink*
